"Set up a fun DIY taco table with soft corn and grainy tortillas, homemade mixed beans, shredded lettuces, carrot slivers, corn, brown rice, tomato, red onion, flat leaf parsley, coriander, avodcado, jalapenos and tangy Mexican pickles.

For something a bit more special, bake a whole fish such as trout or snapper and serve with roasted crunchy kale chips, cold potato salad and a leafy green salad with mixed herbs and lettuces. To bake a whole fish, place parsley stalks, leak and lemon and orange wedges in the cavity. Top the fish with the parsley, leak, lemon and orange also, a drizzle of extra virgin olive oil. Then cover in baking paper and foil, bake in the oven for 180°C for approximately 45 minutes, depending on the size of the fish."
