Lamb Koftas

  • Makes 16-18

Ingredients

  • 500g lamb mince
  • 1 medium onion, grated
  • 2 cloves garlic, minced
  • 2 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 100g Super Barley Stone Ground Flour
  • 2 tsp parsley, finely chopped
  • 1 tsp lemon juice
  • Extra virgin olive oil, for frying

Method:

1) Preheat oven to 180°C.

2) Place lamb mince, grated onion, minced garlic, cumin, salt, pepper, Super Barley Stone Ground Flour, finely chopped parsley and lemon juice in a large bowl and massage to combine for at least 10 minutes.

3) Shape into dessert-spoon sized, flattened oval-shaped patties.

4) Heat a small amount of oil in a frypan.

5) Brown koftas on each side in 2-3 batches, so that you don't crowd the frypan.

6) Finish cooking koftas in oven for 5-10 minutes, then cover with foil to keep warm.

7) Serve kofta with tzatzkiki and a salad of your choice.
