Pistachio, Cranberry & Super Barley Cookies

  • Makes ~12 cookies

Ingredients

  • 1/2 cup BARLEYMAX Original Flakes
  • 1/2 cup rolled oats
  • 1/2 cup wholemeal plain flour
  • 1/2 tsp baking powder
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1 egg, whisked
  • 1/2 tsp vanilla extract
  • 1/4 cup pistachios, chopped
  • 1/4 cup dried cranberries
  • 2tbsp Pistachio Papi spread, melted

Method:

1) Preheat oven to 180°C. Line a baking tray with baking paper.

2) In a bowl, combine honey, coconut oil, egg and vanilla.

3) Fold in BARLEYMAX® Super Barley Original Flakes, oats, flour, baking powder, pistachios and cranberries.

4) Roll into 1tbsp balls and slightly flatten on the tray. Bake for 12-15 minutes, or until golden at the edges. Transfer to wire rack, let cool.

5) Drizzle with warmed Pistachio Papi spread and enjoy.
