Apple & Pistachio Crumble Pots

  • Serves 4

Ingredients

Apple filling:

  • 4 small green apples, cored and diced
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 2 tsp cinnnamon

Crumble topping:

  • 1/2 cup BARLEYMAX Super Barley Original Flakes
  • 1/4 cup rolled oats
  • 1/4 cup plain flour or almond flour
  • 1/4 cup chopped pistachios
  • 2 tbsp brown sugar
  • 1/4 cup melted coconut oil (or butter)
  • Drizzle of pistachio spread (optional)

Method:

1) Preheat oven to 180°C (350°F). Lightly grease four ramekins.

2) In a bowl, toss diced apples with honey, lemon juice and cinnamon.

3) Divide the apple mixture evently between the four ramekins. Bake for 10 minutes, or until the apples are beginning to soften.

4) Combine BARLEYMAX Original Flakes, oats, flour, pistachios, sugar and coconut oil.

5) Spoon the crumble topping over the apples in each ramekin, and bake for an additional 15-20 minutes or until golden.

6) Top with a drizzle of pistachio spread & enjoy!
