Biscoff, Yoghurt & Super Barley Granola Cups

  • Makes 12 cups

Ingredients

Granola cups:

  • 1.5 cups Original Super Barley flakes
  • 1/4 cup hney
  • 1/2 banana, mashed
  • 1 tbsp coconut oil
  • 2 tsp cinnamon

Yoghurt:

  • 1 cup plain yoghurt of choice
  • 1 tbsp Lotus biscoff spread, melted
  • 12 raspberries
  • 1/2 banana, sliced

Method:

1) Preheat oven to 180°C.
2) Combine Super Barley Flakes, honey, banana, coconut oil and cinnamon and stir to combine. Press mix to into a greased 12 cup mini muffin pan and use a spoon to form the crust. 
3) Bake for 12-15 minutes or until golden brown. Let cool (cups will become crunchy as they cool!).
4) Stir yoghurt and biscoff spread together until smooth.
5) Assemble granola cups, spoon yohurt into granola cups, top with raspberries and banana and enjoy!
