Rhubarb, Apple & Super Barley Crumble

  • Serves 4

Ingredients

Rhubarb and apple mix:

  • 3 Granny Smith apples, cut into 2cm cubes
  • 6 stalks rhubarb, cut into 2cm pieces
  • 1 tbsp maple syrup
  • 1 tsp corn flour

Crumble:

  • 1/2 cup BARLEYMAX Super Barley Original Flakes
  • 1/2 cup rolled oats
  • 1/2 cup wholemeal flour
  • 1/4 cup coconut oil
  • 1 tbsp maple syrup
  • 1 tsp cinnamon

Method:

1) Preheat oven to 200°C (180°C FF) 

2) Add apple, rhubarb and maple syrup to a baking dish, and toss to combine.

3) Combine Super Barley flakes, oats, flour, coconut oil. maple syrup and cinnamon in a large bowl.

4) Spoon the crumble topping over the apple and rhubarb mix. Bake for 25-30 minutes, or until golden.

5) Serve with a scoop of greek yoghurt and enjoy!
