Mandarin & Poppyseed Super Barley Muffins

  • Makes 12 muffins

Ingredients

  • 2 large eggs
  • 1/2 cup vanilla high protein yoghurt (or Greek yoghurt)
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1/2 cup mandarin juice
  • Zest of 1 mandarin
  • 1 cup chopped mandarins (peeled and segmented)
  • 1 cup Original Super Barley Flakes
  • 1 cup wholemeal baking flour
  • 2 tsp baking soda
  • 2 tbsp poppyseeds
  • Pinch of salt

Method:

1) Preheat oven to 180°C (160°C FF).

2) In a large bowl, whisk together eggs, yoghurt, olive oil, honey, mandarin juice and mandarin zest. Fold in chopped mandarins and Super Barley Flakes.

3) Add flour, baking powder, poppyseeds and salt. Fold until just combined.

4) Spoon into a 12 pan lined muffin tray and bake for 20 minutes or until golden.
