Super Barley Banana Bread

  • Serves 10

Ingredients

  • 1 cup mashed ripe banana (2-3 bananas)
  • 170ml milk
  • 2 extra large eggs
  • 100g Super Barley flour
  • 150g plain flour
  • 140g brown sugar
  • 50g butter, melted
  • 1 tsp ground cinnamon
  • 1 1/2 tsp baking powder

Method:

1) Preheat oven to 180°C.

2) Line a loaf pan with non-stick baking paper (allowing the paper to overhang).

3) Mash bananas in a large bowl. Add the milk, eggs and melted butter, and stir well until combined.

4) In a medium bowl, mix the dry ingredients - flour, sugar, baking powder and cinnamon.

5) Sift the flour mixture into the banana mixture and stir until combined.

6) Spoon the mixture into the prepared pan and smooth the surface.

7) Bake in the pre-heated oven for 50-60 minutes or until a skewer inserted into the centre comes out clean.

8) Remove from oven and set aside in the pan for 5 minutes.

9) Turn onto a wire rack to cool completely.

10) Cut into slices, serve and enjoy!
