Maple, Apple & Walnut Slice

  • Makes ~16 slices

Ingredients

  • 1 1/2 cups Super Barley Original Flakes
  • 1 cup rolled oats
  • 1/2 cup wholemeal flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Pinch of salt
  • 2 medium apples, grated (skin on for extra fibre!)
  • 1/3 cup walnuts, roughly chopped
  • 1/4 cup olive oil
  • 2 eggs
  • 1 tsp vanilla extract

Method:

1) Preheat oven to 160°C FF (180°C) and line a slice tin with baking paper.

2) Add maple syrup, oil, eggs and vanilla to a large bowl, and whisk together.

3) Fold in Super Barley Original Flakes, oats, flour, baking powder, cinnamon, nutmeg and salt. Add grated apple and walnuts and mix until just combined.

4) Pour into a prepared tin, smooth the top and bake for 25-30 minutes, or until golden and firm.

5) Let cool before slicing into squares. Top with Greek yoghurt, walnuts and maple syrup for an elevated snack!
