Blueberry Crumble Bars

  • Makes ~12 bars

Ingredients

For the base & crumble topping:

  • 1 cup Original Super Barley flakes
  • 1 cup rolled oats
  • 1 cup wholemeal flour
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract

For the blueberry jam layer:

  • 2 cups blueberries (fresh or frozen)
  • 1 tbsp chia seeds
  • 2 tbsp maple syrup

Method:

1) Preheat oven to 160°C and line a slice tin with baking paper.

2) Prepare the crumble. In a large bowl, mix together maple syrup, coconut oil, vanilla extract, Super Barley Flakes, oats, flour, cinnamon and baking powder until a crumbly mixture forms.

3) Prepare blueberry jam. Heat blueberries, chia seeds and maple syrup together until softened and jammy. Let cook slightly to thicken.

4) Firmly press about 2/3 of the crumble mixture into the lined tin to form the base of the slice. Save the remaining 1/3 for the topping.

5) Spread the blueberry jam mixture evently over the base. Sprinkle the remaining crumble mixture over the top.

6. Bake for 25-30 minutes or until the top is golden. Cool completely before slicing into bars (they firm up as they cool) and enjoy!
