No bake fruit & nut muesli bars

  • Makes ~10 bars

Ingredients

  • 2 cups dried fruit of your choice (we suggest dates, apricots and cranberries)
  • 1/2 cup coconut oil, melted
  • 1/2 cup honey
  • 3/4 Super Barley Original Flakes
  • 3/4 cup rolled oats
  • 1 cup puffed quinoa
  • 1/2 cup pepitas (or any seeds of choice)
  • 1 cup nuts, roughly chopped (we suggest pistachios, hazlenuts and walnuts)

Optional - yoghurt drizzle

  • 1/3 cup light Greek yoghurt
  • 1 tbsp icing sugar

Method:

1) Add dried fruit, coconut oil and honey to a food processor. Blitz until a thick, sticky paste forms. Add oats and Super Barley Flakes, and pulse until mixture begins to clump together.

2) Transfer mixture to a large bowl. Add puffed quinoa, pepitas and nuts. Mix until evenly incorporated.

3) Press mixture firmly into a lined 20cm square baking tin. Chill for 30 minutes.

4) Slice into 10 bars (or to your desired size). 

5) Optional - combine Greek yoghurt and icing sugar in a small bowl until smooth. Drizzle muesli bars with yoghurt, allow to set for 10-15 minutes and enjoy.
