Super Barley ANZAC Biscuits

Ingredients

  • 1/2 cup wholemeal flour
  • 1/2 cup sugar
  • 1/2 cup coconut
  • 1 cup Super Barley Flakes
  • 1/2 cup extra virgin olive oil
  • 1 tbsp golden syrup
  • 2 tsp baking powder
  • 2 tbsp boiling water

Method:

  1. Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a large bowl, combine the flour, sugar, coconut, and Super Barley Flakes.
  3. Dissolve the baking powder in water, and then add with the oil and syrup to the biscuit mixture.
  4. Stir until well combined.
  5. Spoon level tablespoons of mixture onto the tray, spacing them about 5cm apart.
  6. Bake for 15 minutes or until golden brown and crispy.
