Super Barley Baked Berry Crumble

  • Makes ~4 serves

Ingredients

Crumble:

  • 1 cup BARLEYMAX Super Barley flakes
  • 2 tbsp slivered almonds (or chopped nuts of choice)
  • 1 tbsp coconut oil, melted
  • 1/2 tsp cinnamon

Berry mix:

  • 2 cups frozen mixed berries
  • 1 tbsp honey (or maple syrup)
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds

Method:

1) Preheat oven to 180°C (350°F).

2) In a bowl, toss berries with chia seeds, vanilla and a drizzle of maple syrup. Set aside for 5-10 minutes, until jammy.

3) In another bowl, mix BARLEYMAX flakes, nuts, melted coconut oil and cinnamon.

4) Spoon berries into ramekins or a baking dish then top with crumble.

5) Bake for 15-20 minutes or until golden and bubbling.

6) Serve warm with a dollop of Greek yoghurt or a swirl of vanilla coconut cream and enjoy!

Serves 2-4.
