Super Barley Breakfast Cookies

  • Makes ~10 serves

Ingredients

  • 1 cup BARLEYMAX Original Super Barley Flakes
  • 1/2 cup oat flour
  • 1 ripe banana, mashed (about 1/2 cup)
  • 2 tbsp peanut butter or almond butter
  • 2 tbsp honey or maple syrup
  • 1/4 cup dates, chopped
  • 1 tbsp pumpkin seeds (optional, but highly recommended!)
  • 1/4 tsp cinnamon
  • 1/2 tsp baking powder
  • Pinch of salt

Method:

1) Preheat oven to 160°C (140°C FF).

2) Add all ingredients to a large bowl, and mix to combine.

3) Scoop spoonfuls of mixture onto a lined baking tray and gently flatten.

4) Bake for 12-15 minutes, or until golden on the edges. Cool on tray for 5 minutes, then transfer to a wire cooking rack and & enjoy!
