Super Barley & Blackberry Slice

Ingredients

• 2 cups Toasted Super Barley flakes
• 1tsp cinnamon
• 3/4 cup pitted dates
• 3/4 cup tahini (or nut-free butter variety of choice)
• 1/2 cup blackberry jam

Method:

1) Add Barley Flakes and cinnamon to a medium sized bowl and mix to combine.
2) Add dates and 1 cup of water to a saucepan over medium-low heat. Stir and gently mash as they soften, cooking for about 4-5mins until a thick paste forms. Add tahini and stir until smooth and fully combined. Remove from heat.
3) Add date paste to Barley Flakes and mix well to combine.
4) Press half mixture into square moulds, or into a prepared tin, and press down to flatten. Spoon jam over the base and spread evenly to the edges.
5) Press the remaining barley mixture over the jam layer, gently pressing down so it adheres.
6) Refrigerate for 30mins, until firm & enjoy!
