Super Barley Honey Crunch Squares

Ingredients

  • 1 cup BARLEYMAX Super Barley Original Flakes
  • 1/2 cup shredded coconut
  • 1/2 cup pepitas
  • 1/3 cup honey
  • 1/4 cup coconut oil
  • Pinch of salt

Method:

1) Preheat oven to 190°C (170°FF).

2) Add BARLEYMAX Super Barley flakes, shredded coconut and pepitas to a medium-sized bowl.

3) In a saucepan over low-medium heat, melt honey and coconut together for 3-4 minutes until the mixture begins to thicken.

4) Remove honey mixture from heat and pour over the dry ingredients. Gently stir though until evenly coated.

5) Spoon mixture into square moulds, or into a prepared tin, and press down to flatten.

6) Bake for 15-17 until golden and lightly bubbling.

7) Let cool completely (this will allow the honey to "glue" everything together and enjoy!
