Super Barley & Weet-Bix Slice

  • Makes 12 bars

Ingredients

  • 1 cup Super Barley Toasted Flakes
  • 4 Weet-Bix
  • 1 cup pitted dates (softened in warm water & drained)
  • 1/2 cup desiccated coconut (+ optional 2 tbsp extra for sprinkling)
  • 1/4 cup hemp seeds
  • 2 tbsp cocoa
  • 2 tbsp honey
  • 1/4 cup chocolate melts (optional)

Method:

1) Add Super Barley Flakes, Weet-Bix, coconut, hemp seeds, cocoa and honey to a blender. Add 2tbsp of water and blitz until smooth.

2) Press mixture into a lined 20cm slice tin.

3) Optional: melt chocolate and spread a thin layer evenly over the slice. Sprinkle with extra desiccated coconut. 

4) Refrigerate for 30 minutes or until set. Once firm, slice into 6 larger pieces or 12 smaller ones & enjoy!
