Blueberry and Coconut Porridge

  • Serves 1

Ingredients

  • 1/2 BARLEYMAX Super Barley Flakes
  • 1 cup coconut milk
  • 3tsp toasted shredded coconut
  • 1/2 cup frozen blueberries
  • 1tsp honey

Method:

1) Add blueberries, honey and 1tbsp water to a small saucepan over medium heat. After 2-3 minutes, reduce heat to low and let simmer for 5 minutes, or until syrup has slightly thickened.

2) Add Super Barley Flakes, coconut milk and 1tsp toasted coconut to a small saucepan over medium heat. Simmer for 5-6 minutes, stirring occasionally, until thick and creamy. 

3) Top porridge with blueberry compote, toasted coconut and enjoy!
