Hot Cross Bun Inspired Super Barley Muffins

  • Makes ~10 serves

Ingredients

  • 1 cup BARLEYMAX Toasted Super Barley Flakes
  • 1 cup plain wholemeal flour
  • 2 tbsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 cup raisins (or chopped dates)
  • 1 medium carrot, grated (about 1 cup)
  • 1/4 cup honey (or maple syrup)
  • 1 egg
  • 1/2 cup milk
  • 2 tbsp orange juice
  • 2 tbsp coconut oil (or butter), melted

Method:

1. Preheat oven to 180°C (160°C FF). Line a 12 pan muffin tin.
2. Add Super Barley flakes, flour, baking powder and spices to a large bowl and mix to combine.
3. Add egg, milk, honey, orange juice and coconut oil to a small bowl and whisk to combine.
 4. Add wet ingredients, carrot and raisins to dry mix, and gently fold to combine.
5. Spoon into muffin tins and bake for 18-20 minutes, until golden brown.
6. Optional: once cooled, drizzle with a yoghurt glaze, or pipe a white chocolate cross for an Easter touch & enjoy!
