Super Barley Pancakes

Super Barley Pancakes

  • Makes 12 pancakes

Ingredients

  • 3 extra large eggs, seperated
  • 2 cups milk (500ml)
  • 60g butter, melted
  • 150g Super Barley flour
  • 150g plain flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt

Method:

1) In a medium bowl, mix together egg yolks, milk and melted butter.

2) In a second bowl, mix the dry ingredients - Super Barley flour, plain flour, salt and baking powder.

3) Sift the flour mixture into the milk mixture and stir until combined to a smooth batter.

4) In a medium bowl, mix egg whites to soft peaks and fold into batter.

5) Heat a large, non-stick frying pan over medium heat and spray the pan with oil.

6) Using 1/4 cup mixture per pancake, cook two pancakes at a time for 3-4 minutes or until bubbles begin to appear on the surface.

7) Turn and cook for 3 minutes or until cooked through. Transfer to a plate.

8) Cover loosely with foil to keep warm. Repeat with remaining mixture, spraying the pan with oil between batches.
