Raspberry & Biscoff Super Barley Bites

  • Serves 4

Ingredients

Slice base:

  • 1 cup Toasted Super Barley flakes
  • 1 cup rolled oats
  • 1/3 cup vanilla whey protein powder
  • 1/3 cup natural peanut butter
  • 1/3 cup maple syrup

Raspberry chia jam:

  • 2 cups frozen raspberries
  • 2 tbsp chia seeds
  • 1 tbsp maple syrup

Biscoff spread:

  • 1/3 cup smooth Biscoff spread, melted

Method:

1) Add Super Barley flakes, oats, protein powder, peanut butter and maple syrup to a large bowl and mix to combine. Press into a lined slice tray and refrigerate for 10 minutes.

2) Add raspberries, chia seeds and maple syrup to a small bowl and heat for 3-4 minutes until raspberries soften. Gently mash with a fork and set aside to thicken and cool.

3) Pour the raspberry mix over the slice base, and spread evenly. Drizzle over the melted Biscoff spread.

4) Place in the freezer for 1 hour to set, then slice into squares and enjoy!

Store in the freezer for up to two weeks.
